Blackened Salmon with Old Mill Dill Dip

Ingredients:
2 tablespoons sweet paprika
4 tablespoons black pepper
1 tablespoon salt
1 teaspoon dried thyme
1 teaspoon cayenne pepper
6 skinless salmon fillet (6-8 ounces each), rinsed and patted dry
3 tablespoons olive oil
3 tablespoons butter

Directions:

In a small bowl, mix together the paprika, black pepper, salt, thyme, and cayenne. Sprinkle the seasoning over both sides of each fillet (about 2 teaspoons per 1/4 pound fillet) and rub in.
In a large cast-iron skillet over medium-high heat, warm the oil and melt the butter. Place 2 fillets in the skillet, cover, and cook for about 5 minutes on each side, until the fish is flaky and browned on the outside. Transfer the cooked fillets to a platter and keep them warm while repeating the process with the remaining fish. Serve hot.
